Pancakes Medley Jeffrey T. Kastner | June 9, 2013 Pancakes Medley is a great way to spruce up a morning breakfast, while making a healthy breakfast at the same time! Note: I like to use a blend of flour as it gives you more of a variety of of flavor and nutrition but if you do not have them all you can simply sub them with what you do have.Ingredients:1 c. Spelt flour1/2 c. Oat flour1/4 c. Amaranth flour – Bob’s Red Mill1/4 c. Pancake/Baking mix – Arrowhead Mills(rice, Potato & tapioca starch, corn flour)1 tbsp Baking powder1 tbsp Powdered Buttermilk – Organic Valley1 tbsp Lemon juice – Santa Cruz Organic3 tbsp Olive oil1/2 c. Milk – Organic Valley1/4 c. Blueberry Pomegranate juice1/4 c. Mango Lemonade juice1/4 c. Walnuts, choppedOne apple, cored and gratedOne egg Chop Walnuts, then core and grate one Apple. Mix ingredients well. Preheat a lightly oiled griddle or frying pan. Add mix, flip Pancakes when they begin to bubble. Brown on both sides. Served with: Salted Butter and Pure Maple syrup.
