Mahi Mahi Delight Jeffrey T. Kastner | August 28, 2011 Ingredients: 3 mahi mahi steaks (roughly 1.5 lbs) 3 tbsp minced garlic (or 3 large cloves) 2 tbps butter, diced 1/4 large onion, diced 2 tbsp. lemon juice 6 tbsp. dry white wine 1/2 cup heavy cream 1 can 14oz. diced tomatoes strained, or 2 medium tomatoes diced 1 – 1 1/2 cups mushrooms, sliced salt and pepper to taste 4 tbsp olive oil 3/4 cup rice 1 ½ cup water 2 ounces (3/4 cup) shredded pepperjack cheese Top with Avocado slices (optional) DirectionsBoil water in a pot, add rice. Preheat oven @ 425. Coat bottom of baking dish with olive oil. Place mahi mahi in a baking dish. Distribute butter evenly throughout pan, over mahi mahi. Spread garlic, onions and mushrooms over mahi mahi. Pour the lemon juice, wine, diced tomatoes and cream over the fish. Season with salt and pepper. Tightly cover baking dish with aluminum foil. Place dish in oven, and cook fish 30 minutes, or until easily flaked with a fork. Remove aluminum foil and cover with shredded cheese for the last 10 minutes. Serve on a bed of rice. Side Note: Because you can’t see the mahi mahi, just note that I add the 3 mahi mahi steaks evenly in the dish, slightly separated so the butter, cream and wine get between them.
