Apple Walnut Pancakes Jeffrey T. Kastner | May 19, 2012 Ingredients: (serves 2) 1-1/2 c. flour 2 tsp baking powder 1 Apple 1/2 c. walnuts 1 egg 1/2 c. milk 2 tbsp olive oil 1 c. Juice 100% Grape works well. 1/4 tsp salt (optional) Note: I use a mix of Spelt Flour, Amaranth Flour, Oat Flour an Hazelnut Meal. Directions:1. Core 1 apple, then grate. 2. Chop walnuts. 3. In a large bowl, mix flour, baking powder.(and salt)Add the apple and walnuts, egg and oil. Add Milk, stir in Juice until the batter well mixed. I think a slightly thinner batter makes a better pancake. 4. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
